We’ve known for some time that most Americans don’t come anywhere close to eating the 7 to 13 servings of fruits and vegetables every day, as recommended by the USDA. Neither do they get the recommended amount of Omega 3s or fatty acids from quality fish to enable and maintain optimal health. The reasons for both, in part, is because of our over-consumption of competing omega-6 fatty acids from processed and fast foods, and filling up on empty calories. But, the situation may be worse than we thought.
